Chocolate Muffins

Let our first recipe be something sweet and healthy... how about Healthy chocolate muffins 👩🏻‍🍳
Recipe no 1... super moist chocolate muffins...


The credit for this recipe goes to Jaspreet, my colleague... she used to get freshly baked muffins to work and that’s how I got addicted to this healthy unhealthy food 😜... I was too nervous to bake however she encouraged me to bake this and it turned out to be awesome...




Ingredients required:

Dry ingredients:
Whole wheat flour - 1 cup
Sugar - 1 cup ( I use brown sugar)
Cocoa powder - 1/2 cup
Salt - 1/2 tsp 
Baking powder - 2 Tsp 

Wet ingredients:
Egg - 1
Olive oil - 1/2 cup 
Boiling hot water - 1 cup 
Vanilla essence - 2 Tsp 

Optional ingredients : 


Chocolate chip or sprinkles 

Preparation time: 30 mins 
Makes around 10 to 12 muffins 

Instructions:

Pre heat oven to 170 C. Lightly grease a 12 hole non stick muffin pan. 

Step 1

Sieve all dry ingredients expect sugar into a large bowl. Once done add sugar (as sugar is not in a powdered form it is not possible to sieve). 


Step 2 

Combine all wet ingredients to the dry ingredients using a whisk or a large metal spoon.  Stir until just combined. 

Step 3 

Spoon mixture into muffin hole.  At this point if you wish to add chocolate chips. Bake the muffin for 20 mins or until a skewer inserted into the centre comes out completely clean.

Take the muffin tray out and allow it to cool for 2 to 5 mins. 

Notes:



Once you have poured the mixture onto the tray; tap the tray on the kitchen top for 7 to 8 times as it helps release air bubbles. Do not over mix in step number 2 as the muffins will become dry.
