Recipe no 2 - Egg Puffs 😍
Friends coming home for chai??? And you haven’t done your weekly grocery ☹️Not sure on what too make ...??? Don't stress too much make this very easy and quick recipe...
Ingredients:
Pastry sheet - 1 pac
Boiled Egg - 4
Onions - 4
Tomatoes - 1
Ginger - garlic paste - 2 Tsp
Green chillies- 2
Red chilly powder - 1 Tsp
Turmeric - 1/4 Tsp
Chicken Masala/ Garam Masala - 1 Tsp
Coriander powder- 1 Tsp
Curry leaves - the more the better
Tomato ketchup - 1tbsp
Coconut oil - 1 tbsp
Water - 1 to 2 tbsp
Egg white
Salt
For the egg filling:
Take a kadai put in some coconut oil, once hot add curry leaves and green chillies... Stir for a minute... Add onions and sauté till their light brown in colour... add ginger garlic paste, keep sautéing for 3 to 5 mins.
Lower the gas flame and add all the dry Masalas, sauté till Masala is well blended
Add tomatoes, stir until they are soft at this stage add ketchup and 1 to 2 tbsp water. Close the vessel and let it cook for 5 mins.
Let’s prepare the pastry sheet
Preheat oven to 180 C
Cut eggs into half
Take a pastry sheet cut in squares in a way that the egg and Masala should fit.
Lightly brush the corners of the pastry sheet with egg white
Fill the Masala in the sheet and fold the ends of the sheets the way you like.
Place the pastry sheets in a baking tray and let it bake in the oven for 20 mins
Notes:
Please adjust spices according to your tolerance level.
If you have time make the egg Masala a day before. For food safety reasons make boiled egg the day you plan to make the puff.
Thaw the pastry sheet for 2 hours before you indent to bake the puffs.
Try to lightly flatten the pastry sheets using a roller.
